Treat Yourself With These Delicious Vegan Chocolate Chip Pancakes

We’ve all had those days when all we want is to eat as much junk food as we can possibly stomach. It’s not easy keeping to a healthy lifestyle, that’s for sure. While it is a great thing that is very rewarding in the long run, it can become difficult at times. There’s no doubt that being on a diet or eating healthy can feel somewhat like a burden at times and even make you feel like you’re deprived. Still, we are here to tell you that you don’t have to feel that way. There are delicious foods you can incorporate into your diet that are healthy! By finding healthy alternatives to your favorite foods, you’ll be able to satisfy your cravings in a much better way that won’t make you feel like you’ve fallen off the wagon. That isn’t to say that cheat meals or days are not a good thing, but it’s still a great idea to have healthy treats. What better treat to find an alternative to than pancakes? The classic breakfast dish is a fan-favorite for a reason. With so many different ways to eat it, there really is a flavor for everyone.


  • 3/4 cup almond milk (or any plant-based milk)
  • 2 tsp apple cider vinegar
  • 1/3 cup maple syrup
  • 1 tsp vanilla paste or extract
  • 1 cup whole wheat flour
  • 1 tbsp cornstarch (another 2 tbsp of flour if you don’t have)
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup vegan chocolate chips

How To:

  1. The first thing you’re going to want to do is to add the milk and apple cider vinegar to a mixing bowl. Let it sit for 5-10 minutes until the milk “curdles” and turns into vegan buttermilk.
  2. After that, add the maple syrup and vanilla. Use a whisk to combine all the ingredients in the bowl.
  3. Add the sifted all-purpose flour, cornstarch, baking powder, baking soda, and salt. Whisk the mixture until it becomes a smooth batter. If you find that the batter is too thin, add 1-2 tbsp more flour. Overall, the batter should be semi-thin.
  4. Use a spatula to gently fold in the chocolate chips into the mixture.
  5. Allow the batter to rest for 5 minutes at least before you cook it. This will ensure your pancakes turn out fluffy.
  6. While the batter is resting, heat the pan you’re going to use on medium heat. Spray it with a non-stick oil or spread with vegan butter. Use a soup ladle to spoon about 1/3-1/4 cup of batter into the pan.
  7. Allow each of the pancakes to cook until the edges look drier and bubbles begin to form on the top. The bottoms should be golden by this point. Use a spatula to flip the pancakes. Cook the other side until it’s golden and the batter in the middle has cooked through completely. It’ll take about 2-3 minutes for each side.
  8. Make sure to butter or oil the pan in between each batch of pancakes. This recipe will make about 4-5 medium-sized pancakes.
  9. Serve with maple syrup or some extra melted chocolate and enjoy!
